The Best Hearty Chicken Soup Recipe

Fall has arrived and the weather is cooling so it's time to start making some hearty meals.  This soup is a favorite because it's delicious, healthy, and robust.  The key ingredient is the Bob's Red Mill Vegi Soup mix which is a delicious blend of split peas, barley, lentils, and tiny alphabet bits.  Serve with a loaf of crusty bread and a nice glass of chardonnay for the perfect cold weather meal.  And remember to always light candles at the dinner table to create a warm, cozy atmosphere. 

A note to vegetarians- replace the chicken stock with vegetable stock, don't add chicken, and change the name to The Best Hearty Soup Recipe!

Ingredients- (use organic whenever possible)

  • 1 cup Bob's Red Mill Vegi Soup Mix (sold at MOM's Organic Market)
  • (2) 32 ounce boxes chicken stock
  • 1 large onion. chopped
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 -2 tablespoons fresh rosemary, chopped
  • 1-2 tablespoon fresh thyme
  • 1/4 cup fresh flat leaf Italian parsley, chopped
  • 2 chicken breasts
  • salt and pepper
  • olive oil

Drizzle chicken with olive oil then season with salt and pepper.   Roast in 400 degree oven for 35-40 minutes.  Let cool, then shred into large pieces.  Reserve drippings.

Saute onion, carrots, and celery, for about 8 minutes or until softened in 2 tablespoons olive oil.  Stir in Vegi Soup Mix then add broth, herbs, and salt and pepper to taste.   Bring to boil then simmer for one hour.  Add cooked chicken and drippings.  Serve in a nice soup bowl complimented with beautiful table linens and enjoy!
